Chocolate Chip Peanut Butter Bar
These double layer cookie bars were a favorite when our bakery was open. Classic chocolate chip cookie on top with a chewy peanut butter cookie layer on the bottom. You can drizzle them with melted chocolate chips if you want to add a touch of lovely. Individual bars freeze beautifully so you can pull them out when you need a little nibble. Several of our customers recommended warming them in the microwave so they get gooey, if you like the gooey, decadent, chocolate kinda thing. Enjoy Life chocolate chips are dairy free, soy free and taste like a normal chocolate chip. I always use natural Jif peanut butter for these cookies. They have less junk in them than regular peanut butter and bake nicer than the traditional natural peanut butter that you have to stir. It’s a fair compromise. There are a couple of options for making this double layer, you can either use all of the dough and make a 9x13 pan, or make half dozen of each cookie (or eat the dough…) and make a 9x9 pan.
Preheat oven to 350 degrees and line a 9x9 or 9x13 pan with parchment paper, leaving 2 inches on either end to serve as handles.
For the Chocolate Chip Cookie Layer:
Follow the instructions on our Cookie Mix and use Enjoy Life chocolate chips as the add in.
For the Peanut Butter Cookie Layer:
Combine in a bowl:
1 cup cane sugar
1 cup brown sugar
Mix on medium low speed until well combined and a little foamy.
Fold in by hand:
2 cups (18 ounces) Jif Natural Peanut Butter
Stir until well combined, let rest for 2 minutes and stir again until the dough no longer sticks to the spatula.
Press peanut butter cookie dough into bottom of pan. Layer chocolate chip cookie dough on top and spread evenly, pressing gently. Bake for 40 minutes for a 9x9 pan and 50 minutes for a 9x13 pan. Cool completely before lifting bars from pan and cutting.
